I’m not much of a cook, but I found this recipe in a recent Real Simple, and have adapted it. It is quick, easy, and quite good.


Our version:

A couple of potatoes and a couple of carrots, peeled and cut. Boil until soft.

Mash the potatoes and carrots, add some frozen peas.

Add a bit of curry powder, salt and pepper.

Make a double pie crust (this is one of my few culinary talents). Roll half into a circle and cut into six triangles. Put a bit of the mixture in the middle and fold up and press to seal the edges.

Cook at 375 until golden, about 25 minutes

Let sit about ten minutes so you don’t burn your tongue and enjoy!

I’ll take Crazy Busy for 100 Alex – I have finally taken more than two breaths and am able to post about our busy weekend.

On Friday, Eddie and I zipped down to Portland where we checked into an amazing Westin in downtown, and then walked until we found a very yummy Lebanese restaurant to have a nice dinner out and celebrate our anniversary. Happy Anniversary!
The bed at the Westin is amazing – I told Eddie it was like sleeping in Miss Muffet’s Tuffet*. And, hey look, you can even buy one (yeah, I'll get right on that).

On Saturday, I had to get out of the tuffet early as I had a 9am interview for Jeopardy. I met up with the fabulous Red Molly, who also had the same interview and we survived the process (I don’t think that’s too much and will get me booted out of the pool, eh?) and had a good time. Afterwards, we had a lovely cup of coffee with our husbands and her kids.

Then, we zipped home so that I could host my monthly Scrapbooking group.

Sunday, after the wonderful Mid-Lenten feast of the Cross , my good friend Mrs. Mousethief and I went to see my Goddaughter’s class perform an Aviation themed MacBeth at the Museum of Flight.

And, then, of course, at home, I had to watch the Season Opener of Baseball. All good, but all a bit tiring!

*was anyone else disappointed when you found out that the cool sounding curds and whey was just cottage cheese?
