There’s a corny joke in here somewhere. Our CSA has been quite corn bountiful this year (the farmer who writes the newsletter explained that they usually plant two sets of corn because usually either the early or late plantings die off due to weather patterns, but this year they both made it). After having a lot of corn with dinner, we still had several ears in the fridge. Upon Michelle’s suggestion, I decided to blanch them and put the corn up for winter soups and casseroles. I found this wonderful site with lots of tips.
Although, let me tell you, pretty picture aside from the site, getting the corn off the cob, even with your husband’s best knife is not pretty or easy. (upon a second look at the site – maybe I need one of these tools? ) But, the bounty must have ended because yesterday’s box had no corn. But it did have some great looking leeks, I’m hoping for a potato-leek soup tonight.
Afterwards, I’ll watch the season premiere of The Office!
