I’m not much of a cook, but I found this recipe in a recent Real Simple, and have adapted it. It is quick, easy, and quite good.
Our version:
A couple of potatoes and a couple of carrots, peeled and cut. Boil until soft.
Mash the potatoes and carrots, add some frozen peas.
Add a bit of curry powder, salt and pepper.
Make a double pie crust (this is one of my few culinary talents). Roll half into a circle and cut into six triangles. Put a bit of the mixture in the middle and fold up and press to seal the edges.
Cook at 375 until golden, about 25 minutes
Let sit about ten minutes so you don’t burn your tongue and enjoy!

We love samosas, but we have Indian groceries here where you can get great ones for pennies. It's a frequent fasting meal for us.
